Stefan and Julie Giles are the husband and wife team that make up Campfire BBQ, which was born out of their mutual love for smoked meats and good company. With his father hailing from Texas and his mother from Germany, you could say that Stefan literally has BBQ imprinted on his DNA. Campfire began as a hobby for Stefan as he tried to satisfy the cravings of family and friends that found the Texas style BBQ they were craving to be an elusive beast in the Northwest, but soon turned into a thriving small business as word of mouth spread and demand grew.
Campfire BBQ only uses quality ingredients and sources meats that are local, organic and sustainable whenever possible. All of their BBQ is done slow and low over a real wood fire – as it should be.
Campfire has been getting great reviews for their brisket -always a packer cut done in a style reminiscent of Central Texas, dry rubbed and smoked roughly an hour and a half per pound. The ribs are a twist on the Memphis style and are served with sides of Bourbon, Beer or Mustard Horseradish BBQ sauce made with product from local brewers and distillers. Of course, Campfire does not ignore the key elements of Northwest cuisine and offers a dry rubbed, lightly smoked, agave glazed salmon. They also offer succulent pulled pork which stands on its own or piled high on a pretzel bun with a delicious apple slaw. There are often guest appearances on the menu including wild game and beef ribs. A nod is given to Stefan’s German heritage with a real German potato salad made with plenty of dill, vinegar and of course bacon. And to finish things off, some hearty bacon cheddar cornbread with whipped honey or beer butter.
Campfire BBQ is able to provide wild game such as rabbit and Elk for caterings and they are always open to discussing twists on the traditional fare as they did with a catering for a patron from Argentina who requested chimichurri crusted rib roast and blood sausage for his party.
Over the last few years Campfire has catered weddings, worked festivals, corporate events, private parties and public events where they pair with local restaurants, breweries, distilleries and musicians in the interest of cross-promoting small business.
Most recently, Campfire BBQ has procured a BBQ trailer for daily business that is reminiscent of a log cabin which they fondly refer to as the Campfire Chuck Wagon.
